Taco Casserole with Ortego!

When we first got married, I made tacos... I don't know, probably every week! My husband started to call me Taco Julie and pretend to speak Spanish to me. He asked one day why I love to make tacos so much. I said it was because growing up, tacos were the MOST fun meal for me, and we hardly ever had them. When I got my own household, I went crazy enjoying regular taco nights!

I've managed to expand my meal repertoire a bit since then, but I still enjoy a good taco (I even had INTENSE taco cravings when I was pregnant!).

So I'm thrilled to talk about Ortega products in this post and share my awesome meal with you! Ortega sent a lovely meal collection of their Whole Grain Corn Taco Shells, Taco Sauce and Taco Seasoning (40% less sodium!). 

Tacos are a great meal for bringing a family together to assemble their own meal - for little kids, it's kind of like getting them to 'cook' without the cooking part! And tacos can be really healthy if you add lots of veggies and use reduced fat cheese and sour cream! Or try different kinds of tacos like fish tacos (which I love!).

For this review, I decided to try the Taco Casserole recipe (see full recipe here and many more awesome recipes!). Because you know, one thing I don't like about hard shell tacos is how easily they break, sending your taco filling everywhere! So I figured I'd start off by breaking the shells!

The recipe was super easy - I did omit the jalapenos because I didn't have them on hand. And the peppers b/c I don't like them - which made for a less colorful dish, but I would not have eaten them. I baked it in a casserole pan - look how yummy & cheesy!

Then I served it topped with chopped tomatoes, sour cream, and black olives! Just like I like my tacos! I should have added a bed of lettuce - that would've been yummy!

Verdict - I didn't even remember these tacos were Whole Grain while I was eating them. I think having them baked into a casserole helped! They tasted yummy and didn't get mushy! I would have liked a bit more spice - next time I'll make sure I have the jalapenos, otherwise I'll add a half packet more taco seasoning. But otherwise, this was a great meal! Would also be awesome for tailgating, parties, hors'deurves...

Definitely a "do-it-again" meal, as we say in our family!
